\nThis is an old French<\/strong> recipe for Ratatouille <\/strong> (basically a medley of cooked veggies,)<\/strong> from:
\n Larousse Gastronomique<\/strong> by Prosper Montagne <\/strong>(Prefaces by Auguste Escoffier<\/strong> and Phileas Gilbert)<\/strong> – c. 1961 by Crown Publishers<\/strong>.<\/a><\/p>\n
\nSlice 2 large onions<\/strong>. Skin, remove pips and cut up 8 tomatoes<\/strong>. Slice 2 peppers [green bell]<\/strong> very thinly, removing core and seeds. Chop 3 garlic cloves<\/strong>.
\nHeat 1 cup olive oil<\/strong> in a heavy pan, fry onion until slightly colored, add the garlic. Cook for 5 minutes, then add aubergines, courgettes, peppers and tomatoes. Season with salt and pepper, add a bouquet garni<\/strong> [bundle of herbs: thyme, bay leaves, and sage, tied with a string] and cook, covered for an hour. This dish may be served hot or cold.<\/p>\n
